Pick Me Up Pumpkin Bite
You know its fall when…pumpkin spice lattes hit the streets! We are officially falling into the season of coziness that includes: binge watching your shows, cozying up on the couch and warming drinks for comfort. I’m a sucker for all of the above, but I’m not convinced that I’m ready to go into full hibernation yet.
We are so lucky to have peeks of sun still hitting our days, that I was looking for a snack that was a nice compromise of comfort, but still giving me the juice to fuel my type A personality. Since pumpkins and the spices that accompany it so well, seem to be the classic flavour of the season, I created a pick me up pumpkin bite.
What’s the deal with pumpkins?
As you may have heard me preach before, I like to eat with mother nature. Winter squashes, such as a pumpkin, takes quite a bit of time to mature, and need a tough exterior to be able to thrive with the cold. For this reason, I lean towards believing that eating foods that can thrive in this weather will also help me thrive. It provides us support with the nutrients of vitamin A, C, and is a great complex carbohydrate. This allows for us to get energy in a slow-burning method, providing us juice for a long amount of time. Energy efficiency at its finest!

1 cup of (gluten free) oats
1/4 can of canned pumpkin puree
1/4 cup of dried berries (I used goji berries)
1/2 cup of pumpkin seeds
1 tsp pumpkin spice
1/4 cup of maple syrup
1/3 cup of almond butter
pinch of salt
1. Combine all the ingredients and mix them together in a bowl.
2. Get dirty! Using a table spoon or cookie scooper and roll them into balls.
4. Place them into a container with a lined sheet.
5. Refrigerate for at least 1 hour.
