Peachy Summer Salsa
I happily spent my Sunday morning at the farmer’s market. It was the place to be! It was filled with people, tons of great bites, and a rainbow of fruits and veggies to take home, thanks to the summer sun.
Being BC born and raised, I look forward to my summer fruits that we are so lucky to have in abundance: blueberries, cherries, and peaches. The peaches were the ones to catch my eye, and my nose! When shopping for fruits, I have a tendency to pick them up and smell them, believing that it gives me a glimpse of the taste it may bring. Since I have more of a savoury tooth, I will often try and find a way to take these fruits and integrate them into a savoury-ish snack…enter peach salsa.
Peach: Mother Nature’s intelligence has this summer fruit providing us with a cooling thermal nature. It helps build body fluids, and has a cleansing action for the bladder and kidneys. They are also known to help with digestion as it helps lubricate the intestines for some ‘movement’ if you know what I mean.
Cucumbers: is 2nd in line (after the watermelon) for its water content! It contains more than 90% water, allowing its internal temperature to be cooler. It helps clear heat, quenches thirst, nurtures the bladder, spleen, lungs, and large intestines (helps to resolve toxins).
Below is the recipe that I use on top of some bbq’d chicken, or with some classic tortilla chips. I hope you enjoy it!
3/4 cup finely chopped cucumber
1/2 cup chopped peaches
1/4 cup finely chopped onion
2 tbsp fresh chopped basil
Juice of 1 lime
1/2 tsp pepper
1/2 tsp salt
1. Take all the ingredients and mix well.
